RECIPE INGREDIENTS
200g (1 cup) granulated sugar
110g (½ cup) vegetable oil
100g (½ cup) Zero Egg liquid
5g (1 tsp) vanilla extract
80g (⅔ cup) all-purpose flour
75g (¾ cup) unsweetened cocoa powder
2g (¼ tsp) salt
3g (½ tsp) baking powder
170g (1 cup) chocolate chips
RECIPE PREPARATION
Preheat oven to 165°C (325°F).
Use mixer fitted with whisk attachment. In mixer bowl combine sugar, oil, Zero Egg liquid, and vanilla extract. Mix on medium for 30 seconds, then let mixture rest for 10 minutes, allowing sugar to dissolve.
While mixture rests, line bottom of a square, 8”x8” baking pan with parchment paper and grease.
Combine flour, cocoa powder, salt, and baking powder in medium bowl. Whisk to blend and aerate.
Measure chocolate chips into separate bowl and set aside.
Beat rested mixture in the mixer on for 1 minute medium speed.
Add dry ingredients. Replace whisk with paddle attachment and mix batter on low speed until dry ingredients are incorporated.
Increase speed to medium-low for 3.5 minutes, building brownie structure.
Add chocolate chips and mix until just combined.
Transfer batter into prepared pan and smooth with spatula. Tap pan lightly against countertop to level batter.
Place pan in preheated oven and bake for 30 minutes, until toothpick inserted in the centre of the brownies comes out clean.
Let brownies cool before slicing and serving.
