Quiche & Frittata

RECIPE INGREDIENTS
200g (1 cup) Zero Egg liquid
100g (½ cup) plant-based milk
Seasoning - salt; pepper; fresh herbs; dried herbs and spices; garlic; nutritional yeast… anything you fancy.
50g (¼ cup) all-purpose flour
5g (1 tsp) baking powder (optional)
200gr (3½-4 cups) filling - sauteed vegetables; plant-based cheese; plant-based meat… you name It.
Prepared savory pie crust. (Yes, we have a Zero Egg recipe for this too!!)
RECIPE PREPARATION
Preheat oven to 190°C (375°F)
Prepare quiche batter - in a large bowl mix Zero Egg liquid, plant-based milk, seasoning, flour, and baking powder (if using) until well combined.
Fold In your choice of filling.
Transfer filling mixture into prepared pie crust.
Bake in preheated oven for 30-35 minutes, until set and golden.
Remove from oven and let cool.
Best served warm or at room temperature.
Additional Notes
-Make sure plant-based milk is not sweetened.
-Quiche can be made crustless.
-Sprinkle some seeds or almond matchsticks on the surface of the quiche before baking for a pretty texture and flavor addition.
-Quiche can be stored in refrigerator and reheated whole, or as personal servings, in the oven or in the microwave.

Quiches and frittatas hold well in refrigerator or walk-in, covered. Use within 2 days. To reheat, place in oven till warm, or microwave for 30 - 45 seconds per slice.
