Pasta Recipe

RECIPE INGREDIENTS
100g (1/2 cup) thawed Zero Egg Liquid
260g (2 cups) durum / semolina flour
30g (2 Tbsp) cold water
2g (1/2 tsp) kosher salt
12g (1 Tbsp) neutral oil
RECIPE PREPARATION
On a clean working surface, combine flour and salt. Make a well in the center and pour in room temperature Zero Egg Liquid, water and oil. Combine with hands or dough scrapper to make a stuff dough.
Work dough for 10 minutes, or until dough is smooth and elastic. Wrap dough in plastic bag and let rest for 20 minutes.
On floured surface, roll dough to the desired thickness and cut as desired, or use a pasta machine.
To cook, bring a large pot of salter water to boil. Add pasta and cook until tender, 3 - 5 minutes, depending on pasta thickness.
Meatballs Recipe

RECIPE INGREDIENTS
50g (1/4 cup) Zero Egg Liquid
453g (1 pound) ground plant-based meat
100g (8 - 10 Tbsp) plant-based milk
50g (1/2 cup) panko or breadcrumbs
`10g (2 tsp) kosher salt
2g (1 tsp) black pepper
5g (1 Tbsp) oregano
3.8g (1 Tbsp) parsley, finely chopped
25g (3 - 4 Tbsp) shredded plant-based parmesan
Optional: 709g (1 jar / 24oz) marinara sauce
RECIPE PREPARATION
In small bowl, soak panko/breadcrumbs with milk and Zero Egg Liquid
In a larger bowl, combine and mix ground meat, cheese, seasonings and herbs
Add in the wet breadcrumbs and mix until all ingredients are distributed evenly
Form balls or use a small ice cream scooper, and set on a separate plate
Heat nonstick pan to medium-high, with oil. Sear meatballs in the pan until all sides have gotten some good color.
To finish on stove-top with sauce: add marinara sauce and bring to simmer for 15 minutes, covered.
To finish in oven: Bake at 400°F (205°C) for 10 minutes or until done.
PREP AHEAD OF TIME
Pasta is best when consumed fresh. We do not recommend making ahead and storing.
Meatballs can be made in large batches using traditional methods. Freeze meatballs or burgers for later use. To reheat, fully thaw and then warm in microwave, pan, or oven.
